Course Description

AIH2002 – Ayurveda: Therapeutic Cooking for Healthy Living, is an interactive course that explores the science of cooking and its impact on health. It covers ingredient selection, food interactions, therapeutic cooking, low-GI foods, and traditional gut health solutions. The course also focuses on correct fermentation methods, different fermented foods, and improving food properties by using simple modern cooking techniques. The course will deepen the understanding of students about the food wisely used for medicinal purposes for better health outcomes.A key feature is experiential learning, where students engage in hands-on activities to observe and analyze outcomes. Additionally, participants will learn to create customized meal plans for themselves and others, integrating Ayurvedic principles with modern nutrition for enhanced well-being. By preserving ancient cooking traditions, students deepen their appreciation and relevance for the timeless wisdom of Ayurveda. In essence, this course empowers students to embrace therapeutic cooking, fostering vitality and harmony in body and mind. Ideal for wellness enthusiasts, Ayurveda, yoga  students ,chefs, and practitioners.

Course Learning Objectives

In this course, students will be able to:

  • Gain an understanding of Nutritional intervention for chronic health conditions
  • Identify role of contemporary cooking and incompatible food impacting metabolism.
  • Practice therapeutic cooking techniques to improve nutritional status in healthy individual and in diseases.
  • Understand the science behind food processing, cooking and its impact on health.
  • Learn to prepare customized diet plan for disorders like Diabetes, Cardiovascular disorders, obesity etc.
  • Assess different cases through student experiential activities
  • Educate community about daily therapeutic cooking for healthy living

Course Content

This course is designed to deliver the innovative application of Ayurveda cooking in modern setting of living. Cooking becomes the primary step in healthy lifestyle. Simple changes in cooking technique and food preparation can be helpful in prevention and management of different chronic disorders. This course will initiate interest in students through experiential cooking activities and enable them to observe the outcomes at the end of activity. The focus will be for students to understand the essence of nutrition through sustainable way of cooking.

The course content focuses on eating habits as potential etiology for increasing burden of chronic disorders like obesity, dyslipidemia, allergies, diabetes and cancer. The sessions are designed to explain the nutritional therapies through Ayurvedic insights. The course will cover important topics like gut health, anti-inflammatory food, low GI food and easy solutions to
incorporate them into daily cooking. The interactive discussion will empower the students to choose food mindfully according to their body type, metabolism and health condition.

Class Structure

There will be a minimum of 1.5 contact hours with the faculty every week for 10 weeks as a basic mandatory semester for the course. The class is structured in a way that promotes interactive teaching, reference readings, discussion and debate. Interesting practical assignments to give hands-on experience of Ayurveda cooking and nutrition. Each class will consist of 1 hour teaching and 30 minutes for interaction on the topic. During the course, students will complete time to time assignments. The course will conclude with compulsory examination in MCQ form and submission of an essay. They need not be academic quality papers – but should be based on students’ self-reflection on what they have learnt and assimilated so far, and what has touched and inspired them deeply.
