Course Description

AIH1102 - Nutrition360: Food is Medicine, is a community-focused course that introduces nutrition through an integrative framework combining modern nutritional science and Ayurvedic wisdom. Rooted in the Āhāra Krānti vision of “Uttama Āhāra, Uttama Vicāra” (Right Food, Right Thinking), the course empowers individuals and families to make informed dietary choices that support lifelong well-being. Participants explore the relationship between nutrition, digestion (agni), immunity, and disease prevention, while learning principles of balanced eating across different stages of life. The course also examines mindful eating, psychosocial influences on food habits, and the Ayurvedic understanding of incompatible foods (viruddha āhāra). By presenting food as both nourishment and medicine, the course fosters nutritional literacy, personal responsibility, and holistic approaches to health within families and communities.

Dr. Marc Halpern, D.C., MSV. (Ayurvedacharya) has played an important role in the development of Ayurvedic medicine in the West. A pillar in the development of the profession in the United States, he is the co-founder of the National Ayurvedic Medical Association for which he served as Chairman of the National Committee on Ayurvedic Education. He is also a co-founder of the California Association of Ayurvedic Medicine and the National Council on Ayurvedic Education.

Dr. Mahadevan Seetharaman is a Duke Integrative Healthcare Leader and Founder of Ayurveda Living. As an Ayurveda Diet & Nutrition Consultant and Yoga Teacher, he provides up-to-data Ayurveda related health and wellness information, directory, research, news, and reviews. Dr. Mahadevan serves on the Boards of the Global Council for Ayurveda Research (GCAR), American Association of Ayurvedic Professionals (AAAP), the American Academy of Yoga and Meditation (AAYM) and co- founded the Texas Ayurveda Professionals Association (TAPAS).

In this course students will be able to:

  • Understand the foundations of balanced nutrition across age groups using modern science and Ayurveda.
  • Identify healthy and unhealthy dietary patterns, including incompatible food combinations (Viruddha Aahaar).
  • Apply nutrition principles to different life stages—children, youth, adults, pregnancy, and elders.
  • Recognize the relationship between food, lifestyle, mental health, and disease prevention.
  • Develop practical, culturally relevant dietary habits aligned with holistic wellness and community health.

Course Content

“Nutrition360 – Food is Medicine”, a comprehensive 10-week course designed to bridge Ayurvedic wisdom with modern nutrition science, promoting a holistic approach to health and well-being. The course begins with the vision of Aahaar Kranti, emphasizing food as medicine and the role of awareness in transforming community health. Participants build a strong foundation in balanced nutrition, understanding macronutrients, micronutrients, digestion, gut health, and the connection between food, energy, and immunity.

The program then introduces core Ayurvedic principles, including Agni (digestive fire), Bhojana Kala (timing of meals), mindful eating, and appropriate food quantity, followed by an exploration of Viruddha Aahaar—incompatible food combinations—and their long-term impact through the formation of Ama (toxins).

A significant portion of the course focuses on life-stage nutrition, addressing the specific needs of children, adolescents, young adults, pregnant women, nursing mothers, and elders. It highlights challenges such as junk food consumption, stress, mental health, lifestyle disorders, and the importance of early-life nutrition in shaping long-term health outcomes.

The course also integrates contemporary concerns such as lifestyle diseases, preventive health strategies, and the role of government initiatives, while encouraging practical application through family and community engagement. By the end of the program, participants are empowered to make informed dietary choices, adopt sustainable lifestyle practices, and serve as ambassadors of holistic nutrition within their communities.

Class Structure

There will be a minimum of 1.5 contact hour with the faculty every week. The curriculum will include reading, reflection, observation, and interactive practices. The class time will include 30 minutes that will provide an opportunity for Q&A and group discussion.
